Peanut Butter and Chocolate Coated Dates

Looking for a quick snack to have on a daily basis that is the perfect amount of sweet? Look no further! This recipe is literally the best ever for a pick-me-up snack!

Dates are nature’s fudge, nature’s caramel, nature’s gift to us so let’s appreciate nature and enjoy this the #fittygalzway.

Ingredients

9 dates

2 tbsp peanut butter

50g melted dark chocolate

Method

Remove the seed from all your dates.

Stuff each date with about 1/2 teaspoon of peanut butter.

Melt the chocolate and with a fork, dip in each date until covered in chocolate.

Let is set in the fridge for 1 hour before devouring every single one.

You can eat the whole batch in one setting we won’t judge 😉.

Red Pepper Hummous Recipe

There is no way you’re not already a fan of hummous! And if you’re not then this recipe will 100% convert you and hummous will be your religion – you’ll defo thank us later! Right let’s stop talking about how amazing it actually is and let’s get cooking.

Ingredients

1 red pepper

1 garlic clove

225g chickpeas

2 tbsp olive oil

2 tbsp tahini

1 tbsp squeezed lemon juice

2 tbsp water

Spices: 1 teaspoon cumin, 1 teaspoon chilli powder.

Method

Start by grilling your red pepper.

In a food processor mix together the garlic clove, chickpeas, olive oil, the lemon juice, tahini and water to thin out.

Give it a good blend and add all the spices and the grilled red pepper and give it a last good mix.

Your hummous is ready to be enjoyed with literally everything you love! Of course we had it with our special FittyFries  😉.

Sweet Potato Toasts

I have been quite obsessed with sweet potato lately! It is just SO tasty, so healthy, packed with nutrients and so versatile! I have decided to try sweet potato toasts and quite frankly it’s safe to say that I am OBSESSED with it. It is the perfect side dish or light lunch to have!

It takes 15 mins to make including cooking times and they are so fun to make as well. Let’s do it!

Ingredients

For 4 toasts

1 thick sweet potato

Spices: 1 tbsp olive oil, salt, pepper, origano, paprika, harissa

1 avocado

1 garlic clove

1/2 squeezed lemon

Feta cheese

Cherry tomato

Method

Pre-heat your oven to

Cut your sweet potato into toasts and season it with all the spices.

Off to the oven it goes for 10 mins.

Mash the avocado and mix with the minced garlic clove and squeezed lemon juice.

Once the toasts ready, butter them with the avocado mixture. Sprinkle the feta cheese on top and add cherry tomatoes. Sprinkle some sesame seeds to make it fancy 😉.

Oatmeal Bake Recipe

Who doesn’t love oatmeal? It is such a versatile ingredient, so healthy, so many ways to cook it and make great recipes with it so why not get creative?

This oatmeal bake is made with red berries but you can make it with bananas, apples, pears just get creative with it as food is all about creativity right? 😉

Ingredients 

Mixed berries

Chopped almonds

  • Dry Ingredients

100g of old fashion oats

Handful chopped walnuts

1 teaspoon of baking powder

1 tbsp cinnamon

  • Wet Ingredients

1 egg

230ml milk of choice

1 teaspoon of vanilla extract

2 tbsp honey

Method

Pre-heat your oven to 200°.

In a bowl mix all dry ingredients and set aside. In another mix all wet ingredients with a whisk.

Pour the contents of the first bowl into the wet ingredients.

In a baking tray put one layer of mixed berries and pour your mixture over it.

Add more berries and some chopped almonds on top.

Put in the oven for 35mins at 200•.

Cut it into slices once ready and your oatmeal bake is ready to be enjoyed!

3 Ingredients Lentil Nugget Recipe

Looking for a quick recipe that is high in proteins, plant based and oh so tasty! Look no further – This simple recipe with only a few ingredients takes 10 mins to put together, you can even cook it in batch for the week and have healthy food on hand whenever you want it!

Let’s get to it, shall we?

Ingredients

For 6 small patties or 3 burger size:

30g lentils (uncooked weight)

1 handful of carrots

20g shredded cheese of choice

Spices: oregano, onion powder, pepper and harissa.

Method

Pre-heat your oven to 190°.

Cook your lentils in boiling water, the water should be double the amount of lentils. When it cooks the water should drain out. If not, get rid of the excess water.

In a food processor, combine the cooked lentils and carrots in a blender.  Then add the cheese and spices and give it a good stir😉.

Form little patties and put them on the tray.

Off to the oven it goes for 20 mins.

Vegetarian Zucchini Bites

This great recipe is the perfect one for meal preps as you can have it with your salads, healthy bowls, as a side or as a snack! Whatever you fancy really 😉!

Ingredients

1 zucchini

15g wholewheat breadcrumbs

1 egg

1 garlic clove

Diced green onion

Spices: salt, pepper, onion powder

15g grated cheese

Method

Start by grating the courgette. Put it on a clean towel and sprinkle with some salt.

Let it rest for 20 mins, the salt helps drawing out the moisture from it. Once the 20 mins over squeeze out all the water from the courgette (as seen on the video below).

Pre-heat your oven to 180°.

In a bowl, transfer the courgette and add in all other ingredients. Stir well.

Start forming tots with your mixture and put it in the oven for 15-20 mins until golden.

Chilli Sin Carne

What’s up guys! We all love a good chilli con carne, and you guys love our recipe from a while back! However for this vegetarian January, we have decided to get creative in the kitchen and create a meat-less version using only vegetables! It is SO delicious you guys and a great way for you to get some veggies in! who’s ready to be blown away?

Ingredients

100g boiled cauliflower

50g mushrooms

1/2 onion

1 garlic clove

Spices: Salt, pepper, paprika, cumin

125g basmati rice

Method

In a food processor, mix the cauliflower followed by the mushrooms.

In a pan, cook the onion with the garlic clove and add in the cauliflower “rice” and the mushrooms. Add in all the spices and let simmer.

Cook your basmati rice the way you prefer. Add in the meatless mixture on top.

Simple, easy and READY!
