Homemade Cottage Cheese – Healthy and Easy

Is there a better way to celebrate our 100th post on Instagram other than making homemade cheese? Making cottage cheese from scratch is so easy to make 🧀, you would know exactly what’s in it and control your calories 😍.

As you noticed from our previous posts, we used it instead of creme fraiche, bechamel or mascarpone 😋

👩‍🍳 Only 2 ingredients:
Whey milk (Leben)
Skimmed milk 🥛

Heat the skimmed milk and add the same quantity of Whey (Leben). Bring it to boil at low heat for 5 mins. As it starts to seperate turn the heat off.

Let it dry and put it in the fridge 😊.

For the lasagna sheets🍝

200g wholewheat flour,

2 eggs

1 teaspoon of salt

1 tablespoon olive oil (healthy fat)

                                                             For the white sauce

250g ricotta – Homemade Cottage Cheese – Healthy and Easy

2 tablespoon almond milk

Chives, parsley, garlic

1 egg

Salt and Pepper

For the Bolognese 🍅

1kg tomatoes

1 onion

2 garlic cloves

1 carrot 🥕

500g lean mince beef 🥩 (or other alternative)

2 tablespoons olive oil

3 bay leaves, rosemary, basilic, salt and pepper.

Step 1: Pasta

Put the flour in a bowl and make a hole in the middle. Put the salt, the egg and 1 tbsp olive oil. Work the paste really well and add in some water to have an elastic paste.

Cover and let it rest for 1h.

You then cut the paste into 4 and you layer each ball in a really thin paste on a floured space. Cut rectangles 5/15 cm that you recover with flour and you leave it on the side.

Step 2: Light Bolognese sauce 🍅

Cut the onions in little pieces and add in the grated carrot and garlic, sauté the veggies until golden. Add the mince beef and add in salt and pepper to taste. Stir well. Add in the tomatoes and the bay leaves, rosemary and basilic. Cover the pan and leave it on low heat for about 25 mins.

Step 3: White sauce

Cut the parsley, chives and garlic. Add in all other ingredients in a blender and mix well.

Step 4 and final step:

Pre-heat your oven at 180 degrees.

Layer the bolognese followed by one layer of lasagna sheet followed by one layer of white sauce. Repeat all steps until the top.

Bon appétit ! 🍝
