Gooey Oat Squares

Got too many leftover easter eggs? Here’s the perfect recipe to use them! Gooey peanut butter oat squares! Only 5 ingredients and 85 calories per slice! They are my new favorite recipe for an afternoon snack with a good cup of coffee 😉.

Ingredients

60g oat flour ⁣

Pinch of baking powder⁣

200ml milk⁣

4 tbsp peanut butter 

1 tbsp honey 🍯

Mini leftover easter eggs

Method

Pre-heat your oven to 190•.

Mix the oats with the baking powder. Start adding the milk and stir slowly until combined.

Add the peanut butter and honey and make sure everything is well combined.

Pour the mixture in a baking tray and pop in the oven for 20 mins until cooked but gooey 😋.⁣

Let it cool down before cutting.

Thumbprint Cookie Jam Recipe

These cookies are so healthy and so easy to make. They are made with absolutely no refined flour, no refined sugar and all things healthy. They are sweetened with a delicious apples and are packed with nutrients.

The jam is a red fruits chia jam and you can find the recipe here.

Honestly you guys, go get your ingredients ready and let’s get to it!

Ingredients

1 apple

1-2 tbsp honey

50g Applesauce

50g oats + 50g oat flour

Handful of your favorite nuts

1 egg

Method

Pre-heat your oven to 180°.

In a saucepan, add in the applesauce, a grated apple the honey and cinnamon.

Cook on medium-heat until you feel that the apple has caramelized.

Add that mixture to the oat flour, allow it to cool down a little and add in the egg. Mix everything well until combined.

Place parchment paper on a baking tray. Form your cookies and place them on it.

Make a thumbprint in the middle and add in 1 tsp chia jam.

Off to the oven it goes for 20 mins until golden.

You can even make these cookies with the jam packed inside.

Don’t forget to enjoy them with a nice cuppa.

Gluten Free Blueberry Muffins

We’ve never done Gluten Free muffins before but here we go! Out first try was with chickpea flour and it was a success! The texture is really chewy, it has a nutty taste to it and the sugars from the banana and blueberries only makes it better! We definitely recommend that you guys try out this amazing recipe!

Ingredients

150g chickpea flour

50g almond powder

1 tsp baking powder

2 ripe bananas

1 tsp vanilla extract

50g blueberries

1 natural yoghurt

30g of walnuts

Method

Pre-heat your oven to 180°

In a bowl start by mixing the chickpea flour, the almond powder, baking powder and walnuts.

In another bowl mash the bananas and add in all remaining ingredients. Give it a good stir until everything is combined.

Pour the content into the first bowl and mix well until you get a thick-ish texture.

Transfer into a baking tray and place in the oven for 30 mins.

Banana Bread With Peanut Butter Frosting

You know my obsession with banana bread by now right? Combine it with my obsession with peanut butter and you got yourself a delicious banana bread muffin with peanut butter frosting. An absolute treat for the soul!

Healthy, tasty and satisfying, this muffin is the best snack for you sweet tooth lovers.

Ingredients 

Frosting

3 tbsp natural yoghurt

2 heaped tbsp peanut butter

1 tbsp honey

1 teaspoon vanilla extract

Method

Please refer to this banana bread recipe but do not use the cacao powder.

In a bowl, mix all ingredients for the frosting and give it a mix with an electric whisk.

Once your muffins are ready let them cool down and add this delicious frosting on top.

Mini Chocolate Chip Muffins – Healthy & Quick

Ever had a crazy sweet tooth and just went to the nearest most sugary thing you had and ate it? But then the sweet tooth just amplifies and you want more and more?

Fear no more because I got you! This recipe takes 5 mins of your time, is only 130 kcal, tastes SO GOOD and there are no sad and lonely leftovers!

Right, I know you are convinced so let’s get to it shall we?

Ingredients

For 1 muffin

25g wholewheat flour (or oat flour)

1/2 teaspoon of baking powder

1 heaped tbsp yoghurt

1 teaspoon honey

1 teaspoon applesauce

1,5 tbsp milk of choice

Optional chocolate chips

Method

In a bowl start by mixing the flour with the baking powder until combined.

Slowly add all other ingredients and make sure you stir well.

Pour your mixture in a ramequin.

Put it in the microwave for 3 mins.

Let it cool down before eating.

Why have a 390 calories muffin when you can have a healthy, filling and satisfying one for 130 kcal? Literally!

Healthy Scones With Caramel Filling

Since coming back to London, I’ve been craving scones! Those buttery scones with cream and jam are literally the best – BUT – they can be so unhealthy and so high in calories!

This is why, I’ve decided to create this healthy scone recipe sweetened with a healthy 2 ingredients “caramel”. They are only 115 calories each and taste the absolute BEST!

What’s good with this recipe is that you do not need any type of sugar as it is naturally sweetened with the caramel.

Ingredients

For the caramel

10-12 pitted dattes

4 tbsp water

For the scones

120g wholewheat flour

1 teaspoon baking powder

4 tbsp milk of choice

1/4 tbsp vanilla extract

2 tbsp honey

1 egg

Method

Pre-heat your oven to 180°.

In a blender put the ingredients for the caramel and mix well until you have a smooth paste.

In a bowl combine the flour and baking powder and mix until everything is combined. Add all other ingredients and stir well until you have an almost sticky texture.

Line a baking tray with parchment paper.

Start forming flat disks with your texture and put the healthy caramel paste in the middle. Close it up onto a flat-ish ball.

Pop in the oven for 20 mins.

Get your cuppa ready because your scones are ready to be enjoyed 😉

Chocolate Banana Bread Muffins

Coming back at you on this lovely Sunday with yet again another banana bread recipe! You guys we are obsessed on how many combinations we can do with these! Literally OBSESSED!

We’re sharing with you a little twist on how to integrate the chocolate this time, but you’ll need to wait 1h before trying them as they need to cool down, we couldn’t wait and devoured everything #sorrynotsorry.

Right guys, let’s get to it!

Ingredients:

Wet Ingredients

2 ripe bananas

2 eggs

3 tbsp milk

2 tbsp honey

Dry Ingredients

120g oat flour

80g wholewheat flour

1 tbsp baking powder

1 tbsp cinnamon

For the chocolate

Handful of chocolate chips

70g melted dark chocolate

2 tbsp natural unsweetened yoghurt

Method

Pre-heat your oven to 190°.

In a bowl mix all wet ingredients and set aside. In another, mix all dry ingredients until everything is combined.

Transfer dry ingredients into the wet mixture and stir well. Add in the chocolate chips.

Grease your muffin tray and put in the oven for 20 mins or until knife comes dry out of the oven.

In the meantime, combine the melted chocolate and yoghurt and mix well.

Once the muffins are ready, take a roller and put holes in the middle of each muffin without going all the way to the end. Transfer the chocolate in the holes.

Let it cool down for 1 hour and your banana bread muffins are ready to enjoy!
