It’s Pancake Day!

Can Pancake day become pancake week? Or month? Or is that too greedy?

Can’t believe that there is a day of the year dedicated to this absolute deliciousness that are pancakes.

So here is a selection of our favorite pancake recipe:

However, this morning I made the oat pancake recipe using wholemeal flour and it tasted amazing! Here’s the detailed recipe:



50g wholemeal flour

1 tbsp baking powder

1 egg

30cl milk of choice

1 tbsp apple sauce

1 teaspoon cinnamon


In a bowl, combine the flour and baking powder and stir well.

Add the milk, apple sauce and cinnamon and stir until everything is combined.

Take your egg and separate the yolk from the white. Add the yolk to your previous mixture and stir well. Beat the white with an electric whisk until you get a meringue consistency.

Start by adding the whites slowly to the mixture by incorporating it with a spatula.

You can use the electric whisk to make sure everything is well combined.

Pre-heat a non-stick pan under medium heat and pour about 5 tbsp of your mixture in and let it cook 2-3 mins each side or until brown!

Topped it with homemade chia jam, red berries, homemade granola and some cheeky peanut butter from Meridian.
