I was quite sceptical at first when I got the idea of making avocado chocolate muffins, however, we are millenials here and avocado is life right? So I jumped ahead and made these lovely muffins, needless to say that if they are on the blog, they are SO BLOODY GOOD!
You can’t even taste the avocado, it’s so tasty when mixed with the cocoa powder and it gives the brownie such an amazing texture.
1/2 a big avocado (or 1 medium one)
1 heaped tbsp of honey
1 teaspoon vanilla extract
70g oat flour
3 teaspoons cocoa powder
7g baking powder
Pre-heat your oven at 180°.
Start by mixing the avocado and eggs in a food processor until having a buttery texture.
Transfer into a bowl and add the honey and vanilla extract.
In another bowl combine all other ingredients. Transfer the previous mix in and stir well until everything is combined.
Grease your muffin tray and add in your mixture.
Put in the oven for 25 mins.
