Garlic Peanut Chicken

Looking for a healthy recipe that is tasty and easy to put together? Look no further, FittyGalz got you covered! This absolutely delicious dish is the perfect balance between healthy fats, carbs and proteins. Plus we got artistic in the kitchen and decided to make it look restaurant quality! Ingredients

30g uncooked rice (should be 90g cooked)

1 diced onion

2 garlic cloves

100g chicken breast fillet

1 lemon

3 washed asparagus

7/8 peanuts

Sprinkle of sesame seeds

Method

For the rice: In a pan cook the diced onion in 1 tbsp olive oil. Once browned, add the rice and 2 cups water. Cover and let it cook for 18-20 mins. Squeeze in a garlic clove at the end and stir well.

For the Chicken: Squeeze one lemon 🍋 and add in the garlic clove, salt and pepper and mix well. Put the mixture all over your chicken and let it sit for 10 mins so it soaks up all the flavours.

In a grill (or oven) add 1 tbsp of olive oil and cook your chicken until golden. .
Grill your asparagus too. In a plate put your rice, chicken on top and asparagus last. Sprinkle some peanuts and sesame seeds.
