What’s up guys! We all love a good chilli con carne, and you guys love our recipe from a while back! However for this vegetarian January, we have decided to get creative in the kitchen and create a meat-less version using only vegetables! It is SO delicious you guys and a great way for you to get some veggies in! who’s ready to be blown away?
100g boiled cauliflower
1 garlic clove
Spices: Salt, pepper, paprika, cumin
125g basmati rice
In a food processor, mix the cauliflower followed by the mushrooms.
In a pan, cook the onion with the garlic clove and add in the cauliflower “rice” and the mushrooms. Add in all the spices and let simmer.
Cook your basmati rice the way you prefer. Add in the meatless mixture on top.
Simple, easy and READY!
