You guys, we have taken it to the absolute next level when it comes to banana bread recipes! We have made a YULE LOG banana bread and this is the greatest recipe for any sort of parties!
- Wet ingredients
2 ripe bananas
3 tbsp milk of choice
2 tbsp honey or maple syrup
1 teaspoon vanilla extract
- Dry ingredients
1 teaspoon baking powder
185g oat flour
- For the frosting
220g soft cheese philadelphia style
1 tbsp vanilla extract
1 tbsp raw cacao powder
100g melted dark chocolate
Pre-heat your oven to 190°.
Start by mixing all wet ingredients together until combined. In another bowl mix dry ingredients and pour wet ingredients while mixing everything until have a dough.
Grease a flat tray and pour your mixture in it. DO NOT use a cake tin. Put it in the oven for 15 mins.
Once out of the oven, take a clean towel and sprinkle some iced sugar on it. Transfer your cake into the towel and slowly roll it up. Reserve in the fridge for 1 hour.
For the frosting: Combine all ingredients and whisk it well together until having a thick consistency. Get your cake out of the fridge and slowly unroll it. Spread all the chocolate frosting on it. Roll it all up again and reserve it in the fridge for 4 hours.
Once ready, sprinkle some iced sugar and grated chocolate on top.
