These last few weeks were for us to enjoy some family time and take some time off cooking, but it feels so good to be back!
And what a come-back – we are sharing with you this superb no-bake raw vegan pie ice-cream recipe, that is so tasty, so festive and naturally healthy!
Let’s get to it!
Ingredients
For the base
14 pitted dates
25g pecan nuts
1 teaspoon peanut butter
For the filling
4 tbsp maple syrup
2 tbsp milk of choice (we used almond milk)
3 tbsp cinnamon
1 teaspoon peanut butter
Method
Line a round cake tin with parchment paper and put aside.
In a blender, blend all ingredients for the base. Transfer to the tin and flatten with the back of a spoon.
Put it in the fridge for 20 mins to let it set.
For the filling: Blend all ingredients in a food processor until having a liquidy mixture. Pour over the base.
Freeze for 5 hours or overnight.
& your pie is ready to be enjoyed!
