#PastaWeek – The Alfredo/Carbonara The Healthy Way

And the pasta week continues! 

How are you guys doing on this fine Monday evening? Nothing better after a long day than this creamy, super healthy and delicious healthy Alfredo/Carbonara pasta plate.

Why Alfredo/Carbonara? Because you can use the same sauce for both recipes!

For the Alfredo – Add Chicken and Asparagus.

For the Carbonara – Add ham and parmesan.

You can also have it with salmon/shrimps. Just be creative with your plate 😉.

Ingredients

For the sauce

1 cauliflower cut into florets

1 onion

2 garlic cloves

200 ml milk

30g grated parmesan

Salt, pepper and oregano

For the pasta

85g wholewheat penne

Brocoli or Asparagus

80g diced chicken breast

Method

Pour boiling water in a saucepan and steam the cauliflower. It should take about 7-8 mins.

Dice your onion and garlic cloves. Cook them in a separate pan with 2 tbsp water (you don’t need oil, but you can cook it in 1 tbsp olive oil if you wish to).

Check your cauliflower is soft by being able to put a fork in it.

Transfer to a food processor alongside the onion/garlic mixture and all other ingredients for the sauce. Blend until you have a nice thick consistency.

In the same pan where you cooked the onion, cook your chicken breast and broccoli and season with salt and pepper. Add in your cooked penne (cooked according to packaging instructions). Add your cauliflower cheese sauce to your mixture and stir well.

  1. First I had thought the cauli would leave an awful after taste (we all agree it’s not the most delicious vegetable though packed with good stuff) but I was greatly satisfied by tasting a nutty delicious pasta and all the fam approves of it ;)! Keep doing good stuff xx
