We wanted to share this super duper easy carrot cake muffins recipe. It tastes SO good, it naturally sweetened with apples and maple syrup and is so easy to carry around if you would want it as a snack at school or work. Plus it has a delicious cream cheese frosting that gives it that extra good taste we all love – the healthy way of course.
Each muffin contains 115 calories as opposed to 345 calories in a chocolate muffin bought in store! Crazy right? I’m not going to lie, I am enjoying one right now as I am writing this blog post! #Guilty
Let’s make these muffins together:
Ingredients
For 9 muffins
2 eggs
2 tbsp natural yoghurt
1/2 tbsp vanilla extract
2 tbsp maple syrup
3 grated carrots
1 grated apple
60 ml milk
190g wholemeal flour (or oat flour)
1 tbsp baking powder
2 tbsp cinnamon
Handful of pecan nuts (optional)
For the frosting
200g cream cheese (Philadelphia style)
2 tbsp maple syrup
1 tbsp vanilla extract
Method
Pre-heat your oven to 180°.
In a bowl, mix your eggs, yoghurt, milk, grated carrots, grated apple, maple syrup and vanilla extract.
Once everything is well combined, add the flour, the baking powder and cinnamon.
Stir everything well together until combined.
Take a muffin tin and pour your mixture in it. Put your muffins in the oven for 20 mins.
For the frosting: In a bowl, whisk all ingredients until combined.
Once your muffins are ready and cool pour the cream cheese frosting on top of each muffin.
