Hello guys – we are midway through the week and we hope you had a healthy and productive week so far! We are sharing with you today this breakfast idea recipe that can also be used for lunch alongside a salad or dinner with a lovely carrot soup.
It has such an amazing mix of flavors, contains so many micro-nutrients and is SO.DAMN.TASTY, you guys have to try it for sure! It takes 5 mins to put together and is just so satisfying!
Right, we know you are dying to get the recipe now, so here it it:
Ingredients
For 2 toasts
5 big mushrooms
6 plum tomatoes (cut in half)
1/2 avocado
Fresh basil leaves
Pine nuts ( 1 teaspoon worth)
1 tbsp olive oil
Method
Pre-heat your oven to 180°.
Cut your mushrooms and plus tomatoes and put them on a tray – season with salt, pepper, mixed herbs and olive oil. Put them in the oven for 15 mins.
In the meantime take 2 slices of rye bread – we used the BIONA ORGANIC RYE BREAD (or any other bread you fancy) and spread your avocado on it (you can add lemon juice and pepper on top).
Once your mushrooms and tomatoes are cooked just add them on top of your toast and add some fresh basil leaves and pine nuts.
An absolute TREAT 😉.
