Today’s recipe is a lunch box staple. On the challenge of turning the unhealthy into healthy we have done healthy chicken nuggets 😋. You can make loads in advance for the week, meal prep the rice too and have a mixed salad. Easy, delicious and healthy 😉. .
For the rice: Cook 1 onion in 2 tbsp olive oil, once finished add one cup of rice and 2 cups of water. Cover your pan and let it cook. 5 mins before it’s done add in 1 garlic clove and 1 handful of parsley. Let it cook for 5 more mins and it’s ready 😋.
For the chicken nuggets: Cook 1 onion and season with salt, pepper and paprika. In a blender put 300g of chicken breast, add in the cooked onion, 1 courgette and season with salt pepper and paprika. Blend it all and you should have a soft texture.
Shape it into chicken nuggets and pop in your oven for 25 mins @ 180•
