Easy and Healthy Spring Rolls

Want a fresh, healthy and quick dinner? Try our spring rolls with their light peanut sauce! 🇻🇳

Ingredients:

 For the spring rolls:
6 rice cakes
2 carrots 🥕
1/2 iceberg salad
200g chicken breast 🐓
1 pack of black mushrooms 🍄
100g soja seeds
12 shrimps 🍤
6 suremi sticks
10 mint leaves

🥜 Peanut sauce: 
1 tablespoon lemon juice
3 tablespoons coconut milk
1 teaspoon honey
1 tablespoon water
1 tablespoon soy sauce
1 tablespoon peanut butter (homemade)
1 pinch of ginger

Method
Cut the chicken and cook it with the carrots in soy sauce and olive oil spray and dip the black mushrooms in boiling water for a few minutes.
For the peanut sauce: mix all ingredients together in a blender.
Mix the chicken and veggies with 4 tablespoons peanut sauce.
Dip the rice cakes in warm water and add 2 shrimps, 1 suremi, 2 mint leaves and add the chicken and veggies mixture. Roll your spring roll and put it in the fridge 30 mins before serving, dip it in your peanut sauce and enjoy 😉
