Let’s go to Italy! Parmigiana Healthy Recipe

Ciao! This weather inspired us to create a delicious Italian meal straight from Sicily, the famous 🇮🇹 Parmigiana 🇮🇹 ☀️. Create this lovely and healthy meal for your family and loved ones as a treat and have a great family day/ evening in style and taste 😉.

Ingredients

2 eggplants 🍆
4 tomatoes 🍅
2 onions
2 garlic cloves
100g grated parmesan
Basil 🌿
1 tablespoon olive oil
Origano, salt and pepper

Method

  1. Cut the eggplant and cook it in the oven for 30 minutes.

2. In the meantime cook the sauce by crushing the tomatoes and cooking them with onions, garlic and the seasonings. Cook at moderate heat until you get a thick paste.

3. Put everything in a blender and mix it well.

4.  You then take a baking tray where you put a layer of eggplant followed by a layer of tomato sauce until the top. Add the grated parmesan and put everything in the oven for 30 mins.
