Courgette Soufflé Recipe

Want a light dinner in these summer nights? Try our courgette soufflé. So easy to make and it allows you to eat your 5 a day.

Ingredients:

4 courgettes

4 mushrooms

4 eggs

50 ml of milk

1 tablespoon of Maizena (Corn flour)

50g of ricotta

Salt + Pepper to taste

Method: 

In a pan you will sauté the courgettes and mushrooms with salt, pepper and mixed herbs.

In a saucepan, mix the eggs, milk, ricotta and Maizena.

Add your veggies to the mix. Put in in the oven at 180 degrees at 20 mins until golden brown. Eat while it’s still hot and enjoy 😊. (You can use as many veggies as you want, make it your own 😉)
